Cheeky Chicken Kebabs

Did you know chicken is high in protein, packed with vitamins and minerals which help with overall skin health, improving the immune system, eyesight, iron and much more! So now who can resist food served on a skewer? This deliciously simple recipe is fast to prepare and fun to eat.

Did you know chicken is high in protein, packed with vitamins and minerals which help with overall skin health, improving the immune system, eyesight, iron and much more! So now who can resist food served on a skewer? This deliciously simple recipe is fast to prepare and fun to eat.

Ingredients

  • 1 cup of boneless, skinless chicken breasts, cut pieces roughly into 2 inches or 5 cm lengths
  • 4 cloves garlic, finely chopped
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon of coriander powder
  • 2 tablespoons grapeseed oil
  • Himalayan salt and black pepper

Method

  1. Heat grill to medium-high (or you can put it in the oven for 400 °Fahrenheit or at 200 °Celsius)
  2. In a bowl, toss the chicken, garlic, thyme, coriander/cilantro, 1 tablespoon of the oil, and ½ teaspoon each salt and pepper. Thread the chicken on the skewers.
  3. Grill the chicken turning occasionally, until the chicken is cooked through 8 to 10 minutes for both. (If baking it in the oven, cook for 15-20 minutes. Make sure it's cooked properly slice one cube to make sure)
  4. Serve the chicken with your favourite salad, sauce or even corn.
