Kale Salad With Almonds & Hemp Seeds

Ingredients
- 4 cups kale
- 1 tablespoon extra-virgin olive oil
- 1/2 teaspoon sea salt
- 1/2 avocado
- 1 tablespoon hemp seeds
- 1 tablespoon almonds
- 1/2 tablespoon apple cider vinegar
- Juice of 1/2 lemon
- Black pepper, to taste
- Remove stem from kale and place into a bowl. Add olive oil and sea salt, and massage leaves using your hands by rubbing leaves between your fingers to soften the fibers. This also makes your kale less bitter.
- Dice avocado and add to bowl, along with hemp seeds and almonds. Add apple cider vinegar and lemon juice, and toss. Top with black pepper.
