Roasted corn with chilli lime and butter

Fresh corn is a healthy option that you can feel good about eating. One medium corn kernels are packed with fibre and the yellow variety is also a good source of two antioxidants, lutein, and zeaxanthin, which have been shown to benefit eye health. Not to mention its richness of various vitamins and minerals, consuming whole corn can contribute to the maintenance of good health.

Fun Fact: Corn can actually be classified as a vegetable, fruit, and grain, depending on its maturity when harvested.

Ingredients:

  • 2 pieces of fresh corn
  • 2 Tablespoons of butter
  • 2 teaspoons chili powder
  • 1 lime, zested
  • 1 lime, cut into wedges

Method:

  1. Preheat oven to 350 ° Fahrenheit or 180 ° Celsius
  2. Place the corn directly on the oven rack and roast for about 25-30 minutes until it is soft. (To check if it is soft just simply press on it)
  3. While the corn is roasting, combine the butter with the chili powder and lime zest. Rub the corn with soft butter mixture, and garnish with a lime wedge.
